Everything varies, I do neither of those though, I put iTunes, news websites, Skype, my emails, calendar, reminders, or pretty much anything else that could use the extra vertical space in the side monitors. I also usually split the 30" in half with two separate programs at the same time, unless I'm watching something or editing photos.

A lot of people really prefer multiple monitors to all be the same size, but I can see the logic in having a big central monitor for your main focus and a couple of smaller auxiliary ones for quick reference.

It does look good and symmetrical, since the two end monitors are both the same size.
