If you have the money, build a NAS/Plex server with a good RAID. Otherwise, throw it all in the cloud (Amazon S3, BackBlaze B2, etc.)
I stream everything. Don't give me the "it will likely disappear one day and you'll want to rewatch it and you won't be able to" shit - besides this being extremely unlikely in our age, even if it disappears and it is so good you just want to watch it again, you can always buy it.
