To get rid of files Im using File Shredder v2.0 with the DoD 5220-22.M algorithm. I use to use the Guttman algorithm with 35 passes but it takes too long and I've heard after 7-10 passes it's redundant.

Arch is heavyweight, despite the install process and headless base install. Debian is lighter weight. Gentoo would work, but be prepared for an install that takes forever; but after it's done it'll be fast as all hell. Void Linux is good too, make sure to use the musl variant.
Of all these, Debian is the most 'just werks.' Most broad support and use, so you'll have an easy time getting it set up and installed, and any problems will have lots of answers out there on the internet.

Balance is key. Keep the technology that can genuinely improve life and mental/physical health. Avoid those things that you find harmful or unnecessary. Use a Faraday cage in areas you want to keep secure, if you must.
