Zenfone is terrible. The build quality and sheer amount of bloatware made me sell mine soon after purchasing it based on bad /g/ advice.
From what I read on the zenfone2 subreddit, it is common for the thing to just totally die after being plugged into a PC. Asus has poor customer service for RMAs as well, according to these reports.
If its any consolation, the guy I sold it to says that he really likes it. He had to get me to sign a form saying i sold it to him and needed the receipt because the IMEI got blacklisted somehow. He seems like a pleb who has never experienced stock Android.

No. If your goal is to make a distro you should first start buy learning how to host your own software repositories compatible with your package manager of choice. Then once you have that figured out, learn how to modify the installation media of an existing distro to utilize your own software repository. That's really all there is to it. From there you can start customizing the default software downloaded by the installer (if you choose to have an installer).
That being said, LFS is not a bad idea if you want to get your hands dirty. But if you are asking this question to begin with, my instinct is to tell you to start with Arch Linux since it's a lot easier to get up and running, but still requires you to at least understand on a basic level what some of the fundamental parts of the OS consist of and how they can be configured.

I use Arch regularly. I just wanted a better understanding of linux as a whole, as opposed to just following a flow chart to install it. I don't intent to use the distro really, I just want the experience.

Probably not, and they don't need to.
People buy Android for personal mobile devices. It lives on innovation. New phones add new features that make people want to buy them. Mobile interfaces are fairly new and constantly changing and improving.
People buy Windows for business, productivity, and gaming. For business and productivity it mostly does better with minimal innovation and progressive feature enhancement. People want the same interface they're used to, and desktop interfaces are mature. Gaming is similarly mature. There's not very much MS can bring to it apart from improved DirectX that supports graphical enhancements on new GPUs.
Microsoft knows they're losing ground to Android at home. People are switching from desktops and laptops that run Windows, to phones and tablets that run Android. They've fought back some with Windows Mobile and Surface, but it's a losing battle. They admitted this by selling "Microsoft Edition" Samsung Galaxy S8s that run Android.
But it's not going to kill them. Desktops still kill mobile on productivity. Android can run on a desktop, but the GUI sucks for the use case, and the app selection for desktop tasks isn't good. Businesses aren't about to ditch PCs anytime soon.
