Just go nuts with the peanut butter. If your bulking the day doesn't matter and it's MCT anyways. My bulking shake is 2 cups of chocolate milk, one scoop protein, 100g (~6tbsp) peanut butter, and 1 banana. It has a lot of fat, but I like to eat pretty starchy food when I bulk, so it works out.
