One tip I got for getting more veggies into your cooker is to saute high water content veggies first. Put stuff like onions, mushrooms, and spinach in a pan for like 5 mins and you can reduce their volume to 25% of the uncooked volume.

Nice tip. I like to pan-sear my meat in coconut oil and butter before throwing them in the crock. I will then cook down onions and garlic in the same pan then deglaze with stock or wine.
