It is, when you just start weight lifting. There's something called neuronal adaption:

it makes no sense how he put on a ton of strength and so little mass
the only explanation is that deadlift and squat are actually all erector and core and dont require big legs nearly as much as we think they do

How do you determine if your weight lifting session was light, moderate, or vigorous?

I'm wanting to record it in my Lose It app, but is there a standard weight limit for either of the 3? Or is it more by your body?

I would assume a shorter or thinner guy (or beginner) might find a moderate workout with the same weight a big dude would find light?

How do I determine?

Can you gain strength and size at the same time? I read that to recover from taxing exercises like squats and deadlifts, you have to rest for 3-4 days... but then you won't get strong :/

3-4 days rest is retarded. Just don't go up to your 1rm every time, but you can squat AT LEAST twice a week. Deadlifts is a bit different though, because I find i get some knee and hip issues.

Anyways, it is possible to gain size and strength if you pyramid sets, ie start at 12 reps with lightweight and work down to 3 with a heavier weight.
