Just curious as I noticed I seem to consume 1 liter of water for every 1,000kcal (5 liters to 5,000kcal)

Main source of carbs: 1 cup of large flake oats + 1/2 cup of frozen blueberries with boiling water, typically have that twice a day.

Main source of protein: Greek yogurt, frozen costco chicken breasts

Main source of fats: Almonds + olive oil.

Why does Stronglift have 2 days rest on the weekend? Is 1 rest day not enough?

For example:

Monday -> Wednesday -> Friday -> Sunday

Tuesday -> Thursday -> Saturday

Monday - > etc

If your criteria are "I want to exercise 6 days a week" and "I want sets across so that I don't have to change the plates often", doesn't it make sense to do vanilla TM, but with each day split to two?
So for example you'd split the Monday to Monday and Tuesday, moving bench and rows to the latter. Similar for the other days. Wednesday doesn't make sense to split so you could just do sprints on Thursday or even enjoy a second rest day

Are your shoulders meant to hurt during low bar squats? Does it signify bad form or is it just part of your shoulders getting stronger?

It means you lack shoulder flexibility and/or you are holding the bar wrong, which you are probably doing due to poor shoulder flexibility.

I was out for a long time due to severe bicep/shoulder tendonitis because whenever my squat got heavy I was putting too much pressure on my elbows and shoulders to hold the bar as it wasn't sitting on my rear delts naturally.

Don't ignore it, it will become a serious issue, I couldn't throw a tennis ball without sever pain for a month.
