Because she's a quartz and fits the description Peridot gave of what a quartz was. We know from Steven's birthday that constantly stretching your size isn't something gems can do and she's not big enough to be a diamond.

seriously though, it looks more like a pink diamond then a rose quartz, based on everything I just saw in image searches.
The pink diamond does look different in shame on the old Diamond Authority symbols sure, but all the diamonds are represented by triangles now that there is only three. We know this is not accurate for Yellow or Blue, so the symbol of the diamond authority does not adhere to the exact shapes of the gems themselves.
Also, somebody made it a point to deface Pink Diamond symbols in the arena. Yet Pearl wears a pink diamond on her flight suit, and this also appears on Sardonx's shoes. This suggests the symbol has some significane to Pearl that she doesn't see a need to change, and by it being part of Sardonx without being a problem Garnet is okay with it as well. So the two Gem's old enough to know what the Pink Diamond means don't mind it's iconography, but somebody smashed up very specific parts of the arena... Which to me suggests it might be out of personal shame instead of hatred of another. Pearl certainly doesn't hate the symbol...
It looks like a cut Rose Quartz. Not only that, everything that belongs to Rose features the more milky shade of pink found on a Rose Quartz. Lion's mane, her room, the CG flag, etc. Not only that, from the two diamonds we've seen in the show she doesn't even resemble them appearance wise or gem wise.
I think we're missing the point on the whole "Rose is Pink Diamond debate.
The point is not about how much evidence there is for or against the theory.
The point is that if the theory were correct it would be incredibly stupid and anti climactic and I have faith in the writers not to write something so fucking retarded.
Yes, Peridot explained that gem types are all naturally the same size as each other unless they're defective. Rose is the same size as Jasper, another quartz, and isn't anywhere near the realm of a Diamond whose hands are the size of a Pearl. Even if she was just some super defective Diamond, their society wouldn't make her a gem matriarch, as they are supposed to be perfect beings.
She could tell that Steven and Amethysts were both quartz. If she was wrong about Steven then she would be wrong about Amethyst because their gems look the same and don't resemble the diamonds we've seen in show.
You do know how big Rose Quartz was compared to other characters? Besides, it would explain why Pearl was with Rose Quartz in the first place. Hell, the temple door for Rose has a Triangle just like the Diamond authority

Rose Quartz literally being a rose quartz is something that's so expected that theories try to make believe that it's something else when in the end she is literally what she is called.
The diamond authority didn't start using triangles until after Pink Diamond supposedly left though.
Also she's still tiny compared to the diamonds we've seen. She's comparable in size to Jasper, which fits in with the wild theory that maybe, just maybe, Rose Quartz is a quartz.

Not Stretching, but perhaps a deliberate regeneration into a different default look? Amy rushed hers and was unstable but there was some indication you could change more then your clothes.
am i the only one that thinks Rose Quartz served Pink Diamond who was compassionate enough to want to spare the Earth, but ultimately was taken out by the other diamonds? the only way to cut a diamond is with a diamond after all.

No she didn't. She might have said "you're some kind of quartz, right?" but that just means she couldn't peg the specific kind of quartz he was. She would know the difference between a quartz and a diamond.
And besides that all gems have been able to recognize other gems by sight. Rose Quartz might be a rare kind of quartz but it's still, recognizably to them, a quartz. There's no way they'd confuse it with a diamond.
The other Diamond symbols are triangles in a triangle in the "new" logo of the Diamonds.
Rose's door shows a lone triangle within the rose-shaped mark.
Clearly that represents a diamond.

Think about it:
We already know Rose is Pink Diamond because she is pink.
Lapis is clearly Blue Diamond because she is blue.
Sapphire is also probably Blue Diamond.
Ruby is red so there is probably a secret Red Diamond.
When they took that gem from the pyramid that was very obviously a diamond and couldn't have been anything else, Pearl was nowhere to be seen.

I doubt it, I think the mural is just a mural and takes artistic liberties. I mean she probably changed her skin color because of her human fetish, but a massive size change on that scale is a little iffy.
So why would the "new" logo have any bearing on Rose's flag and shield? Not only that, the triangle is incredibly small compared to the logo as a whole and just looks like its supposed to represent the center of a rose

I mean, Garnet was able to change her appearance multiple times outside of her outfit (skin color and hair, although not sure if it counts since she's a fusion).

I don't think that really counts because she's a fusion. She didn't even have the right feet at first, with her it's probably due to a synchronization thing. Though Amy did grow up, Greg says the gems have always been the same but she visibly aged.
Theory based on absoutely nothing: Pearl was originally made for white diamond. Yellow Diamond has a Yellow Pearl, Blue Diamond a Blue Pearl... This one came out defective and was going to be smashed and a new one ordered but Rose liked the thing and said she'd take it. This began Pearl's eternal devotion (and eventually she changed her hair color)
The main takeaway of that whole debacle is that if we ban SU from /co/, it will trigger another domino effect that will result in Gemchan, Gemtleman Pizza Hunt, Gemcon, and other irredeemable forms of autism that will make the SU fandom a TRUE cancer, culminating in the rise of /gem/ on 4chan.

I remember people were predicting Korra would fall for that Red Lotus airbender, probably jokingly. Basically by the end of the series nobody expected a romance.

Not true. We've seen White and Yellow Diamond multiple times. Blue Diamond is relatively new, but we've seen the old symbol with Pink Diamond and the new one without it.
It's obvious that Rose Quartz is just a depowered Pink Diamond and that they're lying to the fans when they say she isn't.
