Probably last one season and then live on mostly because of waifufags occasionally trying to plug it. I mean it depends entirely on who would've been attached to it but I think it would've worked in Nefcy's comic form more than as an actual show.
Has a bit of a dark edge to Star's fantasies and her reality that might have been softened in favor of her just acting crazy. Though it would've always ended happily too, so I dunno.
People often forget or ignore that the concept of Mewni, other dimensions (and dimensional scissors), the royal magic wand, Ludo and the monsters, Marco, etc. were also Nefcy's creations too. It ended up different but it was still from the same creator.
Basically I think I'd only be really interested in OG Star if just handled by Nefcy, while the Star we now have was given a strong enough concept by Nefcy to survive as an actual cartoon.

The algorithm. Youtube has made it impossible for short form entertainment to make any real money. The only ones that stay afloat do it with Patreon Sponsors, or pure passion.
It's not like most of these people are making art for arts sake either; it's something they enjoy doing and they have a vision, but without a fanbase to encourage them there is little reason for them to continue. They can simply make money doing lets plays or vlogs and do art when they actually feel like it, however little that may be for some at this point.
