why is there no gluten free and locally sourced fast food without being too overpriced?
Some pizza places offer a gluten free base and it's only slightly more expensive than the regular base.
That's all I know so lurking with interest. It's a shame that Subway™ don't have a gluten free option.
and also because non-celiac gluten sensitivity is still not confirmed to exist anywhere except in the minds of annoying white chicks and actual celiacs are a tiny group by comparison. so the target audience is still niche.

I think there are some people in this thread who don't realise that making a gluten free option is as simple as substituting wheat-based flour with a corn-based flour.
Not hard. Not expensive.
