I'd love to do tofu more often, but I just have no idea how to work with it.
Panfrying - it's either completely black underneath, or I end up with soggy, nasty crust
Can you grill this shit?
How do I cook it without having to set aside half a day for fucking draining/pressing and still have it fuck up?
I like to cut the block into thin slices, marinate for a few hours, then bake them until brown and a bit crispy.
Makes a great sandwich filling.
Slicing the block first makes the slices absorb more flavor than doing it after. I usually make a teriyaki marinade.
