Just made pic related. One large smoked ham hock into 12 cups of water with two bay leaves, 2 tsps of sea salt simmered for an hour.
Then I added 2 carrots, 2 sticks of celery, 1 large onion, 1 clove of garlic sliced and two cups of green lentils.
Let cook for another 1 hour or just under.
Then I extract the ham hock and separate the fat from the meat and bone and return small clumps of shredded muscle meat into the soup.
Finally 1 tsp of apple cider vinegar and 1 tsp of dijon mustard before serving.
That sounds pretty damn good. I'd probably use peas instead of green lentils.
