Lots of vinegar and/or soy. All the major proteins, land and sea, plus offal. It's all peasant food, so there's not much to any of it.

Lumpia, adobo, pancit, and deserts like ube are really good though they are real heavy
Then there are terrifying horror dishes like sinigang which is a vinegary fish head soup. Overall it's not terrible but it's also not something I go out of my way to eat

It's edible but it tends to be bland. Though if you like fusion food it may be interesting. Also if you like gore.
