i find it better that way; the avocado is kind of more expensive and particular, its consistency isnt the same, isnt fresh and crunchy like the other ingredients, so its good to be able to separate it from the rest ( in my taste, not everyones ), also if you dice it too much and mix it with the rest you can end up with a puree melted thingy which pretty much kills the purpose of this combination. I'm not a vegan but this looks very good, would eat happily, 9/10.

Well, since it's clearly raw then the oil is meant as a dressing. Therefore you could use whatever oil you wanted to since its smoke point would be irrelevant. A good choice would be a flavorful oil, like extra-virgin olive oil. But you could use whatever you want.
