I use some weird japanese thing called a mizudashi. Basically a pot with a filter in it. Works well enough

Even grind size is important, maybe not end all be all, but if you're making enough coffee eventually you'll be able to notice the improvement in how even the grinds are after switching to a burr grinder. I hope you don't mean roasting literally right before brewing, let those beans cool and let off gas for a day or so OP. They'll be a little less bitter.

I love my Aeropress. Even though I'm stuck with a shitty Mr. Coffee grinder which fucks up my grind it still makes great coffee.
