EVOO as opposed to OO?

EVOO is more expensive and flavor temperamental. And once you apply rel heat to it, it is indistinguishable from from regular OO.

Use EVOO when you aren't going to be applying heat it if you care for it's flavor (mayo, pesto, etc.)

If you are using heat (frying a fillet, etc.) save yourself the $$ and use regular OO.
