I like rare, but this is beyond rare. It's practically blue, and probably wasn't very warm in the center. Should have used a slightly lower heat for a slightly longer time to get a better consistency, as well as allowed it to warm to room temperature before cooking.

Also, you didn't grill it. I hope you at least used a cast-iron pan.

the center is good, but you didn't get enough crust on that sear. too much grey, not enough brown.

it should seamlessly meld from brown at the edges to pink in the center. Let it sit in a warm place for a couple of minutes after cooking, covered with a towel or something. Reheat slightly if you need to before serving.
