Nothing really exotic. Being in the southeast states I've had gator, frog legs, and conch (both fritters and right off the seafloor). Other than that octopus, squid, raw quail egg (do not recommend. Raw eggs make me queasy), escargot. Anything my grandmother cooks since it's likely compiled of severely expired freezer burnt ingredients and she always manages to get cat hat in it even after her cat's been living outside for years...

Acociles are delicious on a salad with nopales and tomato, they're a lake crustacean and since it's really small you eat it whole

Chapulines are dried and seasoned with a mix of chile, they taste like peanuts that way. You can also eat them fried in tacos but they taste nasty that way and have to put a shit ton of sauce to make it taste good.
