Is that the wormy cheese? I heard people have to hold their hands over the bread it is spread onto in order to stop the worms from jumping out.
It is a shame that it counts as a health violation, because I would definitely try if I had the chance.
It's not the exact same thing, it's an approximation. There may well be one main enzyme (or whatever) involved, but certainly there will be more than just one chemical involved. Perhaps hundreds.
This is the same reason why real truffle oil tastes better than the imitation stuff, or why genuine vanilla is more flavorful than artificial that uses vanillin only, etc.
There was this crepe store here, and they ran a contest in Facebook for a free mille crepe. I was one of the winners but I never claimed my prize. Sad that the store's closed now. Owner was french, so it would be genuine mille crepe.
