It got me thinking about how pretty much every culture has it's own form of potato pancake. Every type of cuisine from around the world, that I've ever had, has had some form of potato pancake. Japanese, Indian, Belgian, German, American, Mexican, French, Russian, and the list goes on.......
What's your favorite style or regional form of potato pancake?

Crespelle di patate.
It's a thick, yeast-leavened batter of mashed yellow potato, egg and flour, fried more-or-less like a North American pancake (only with considerably more oil).
Pic related is the pizza-inspired version, pizzette fritte/pizzette di patate. These are the next incarnation of Italian-style potato-pancakes, topped with tomato sauce and grated hard cheese.
