Bring the porridge to a boil and add salt, orange peel and syrup. Boil for half an hour, stirring continuously. After boiling, whip the mämmi for a while before putting it into bowls that have been rinsed with cold water. Scatter some sugar on top and put into an oven (100-125° Celsius) for three hours. Serve with fresh cream.
It's good though, tastes of rye and sweet. Also it is too early for supper in Spain.
it's a sweet rye porridge
make a porridge out of (malted) rye flour, orange peel, salt and water, sweeten it with molasses or other dark syrup and let it cook in the oven until nice and toasted
serve with cream and sugar or if you're a modernist heathen, vanilla cream.
