I bought a ham hock for cheap, got any ideas what to cook with it? I was thinking pea soup or some sort of stew. Also, skin on/off?

chop your carrots and onions to little itty bitt bits, don't use much of either
use onion powder instead
don't use all split peas, use like half whole peas then blend it at the end with immersion blender.

I used one once in a slow-cooker beef stew. It basically let out all that fat and bacon flavor into the broth. It was amazing. I also use a cup of wine in my stew as it leeches out all the good fats and flavors.
