Essential Cookingware Thread

DO YOU FAGGOTS EVEN /ironskillet/ HERE?
>>
>>7295760
Lots of people do. Aluminium is enough for me, though.

Add a griddle, saucepan, and roasting pan and that's basically everything you absolutely need.
>>
>>7295768
How do you make soups/stews or even pasta?
>>
>>7295860
With the saucepan.
>>
I just cook shot in disposable pie played heated over the stove
>>
>>7295870
that's genius.
>>
>le cast iron meme
>>
>>7295760

No, but I'm thinking of getting pic related.

no it's not

I have:
A large (20'') stainless steel sautee pan
A carbon-steel wok
A 12'' cast iron skillet
Three cheap anodized aluminum saucepans of different sizes
A stock pot
Some mixing bowls
A square teflon omelette pan

now fuck off

The cast iron is the biggest meme ever.

So fucking stupid. When you rub it with a wash cloth black shit comes off it. Real healthy.
>>
>>7296610
>not wanting to get cancer from food, to die before you get old enough to retire
bad goy
>>
>>7296584

I'm willing to bet there's more carbon steel, stainless and even non-stick skillets being used by professional cooks than cast iron.
>>
>>7295760

way to get completely scammed mate. Cast iron shilling is an absolute joke.

Aluminum core cannot be bested.

>>7296584

>most cooks do

cooks don't wait around for 10 minutes waiting for something to heat up. cooks don't autistically season their pans. Cooks don't believe every little thing Alton Brown says on the television.

but anyway, let's check google:

http://lmgtfy.com/?q=reddit+cast+iron

oh look! It exists! click the link and stay there.

wow

never seen a more reddit post in my life
>>
>>7296610
It's carbon anon. The same thing that prevents sticking on cast iron. And do you think small doses of iron are bad for you?
>>
>>7296627
They don't use them professionally because they cant be thrown in a dishwasher, not because they don't like them.
>>
>>7296631
If you want to fry your hot dogs and reheat your kraft mac and cheese in aluminum, fine with me.

Cast iron offers more even heat transfer. But really, enjoy cooking with baby's first pan set.
>>
>>7296921
Why are you quoting the entire fucking post you stupid faggot?
>>
>>7297091
Because the whole post is pretty cringeworthy

Enjoy your Alzheimers.
>>

Absolute shit design. The thin handle bites into your palm if you have a lot of food in it
>>
>>7296548
A Fad is sometthats popular
>>
>>7297260
the iron cast meme is just a very loud minority
>>
>>7297155
aluminium is not the surface you know, it's the core. You don't cook on aluminium, you cook on the outer layer, which is not aluminium (sometimes, titanium, polymer, ceramic, etc)
>>
>>7297299
>been around for thousands of years
>fad
>>
>>7297323
stone axes were also around for thousands of years, but if you try to bring that shit to 2016 as an alternative to precision machined metal axes, you're a fag.
>>
>>7297309
Why not use copper, anon? Then your pans wouldn't be shit tier.

I can't wait to hear you tell us about the superiority of cutco knives.
>>
>>7297341
>copper
enjoy oxidization, and ruining shit with acidic ingredients and poisoning yourself.
>>
>>7297348
"[Copper] is not the surface you know, it's the core. You don't cook on [copper], you cook on the outer layer, which is not [copper]."

Aluminium pans exist because they are cheap.

I love my cast iron skillet but it smokes way too much for common use, not to mention it's hard as fuck to get protein residue off of it after cooking a piece of meat.

I will say that it's great for cornbread and cooking onions.
>>
>>7297429
It's not the iron smoking, anon. If you've seasoned it, it should stick less than your steel pans.
>>
>>7297475
unless you use any acidic ingredients like tomatoes. kek cast iron, cuck iron
>>
>>7297483
Agreed, searing only. Braise in enamel.

Better a long thin handle than a short one like in OP's pic.
>>
>>7297682
Except a fulcrum is not involved
Unless you are thinking about your pointer finger as a fulcrum, it actually is the opposite of your diagram
>>
>>7297039

A 3 Michelin star restaurant could pay a top dollar whore to lick their pans clean. Yet they still just use stainless steel (and occasionally non stick). If they are traditionalists they might use carbon steel.

Cast iron pretty much never.
>>
well I like my cast iron pan. I like how I can use metal tools in it without damaging it, how it can heat up to very hot temps without it damaging the pan, how it doesnt have that teflon fumes to kill my bird and me, how its easy to clean.
The seasoning is really good too, it doesnt take long to build up to non stick level. I cooked eggs in my pan and got them out no problem.
And for those who complain its heavy, its not that fucking bad, you have to be a small child to not be able to cope with lifting it.
>>
>>7297051

>Cast iron offers more even heat transfer

literally the exact opposite of reality
>>
>>7297219

It also conducts too much heat. I'd get a neoprene sleeve with it though so neither really matters.
>>
>>7298020
Correct. Here's a comparison I did with flour myself.

Cast iron has great heat capacity, which makes it great for searing and browning, but shitty conduction.

The pans in the photo are Lodge, All-clad tri ply, and some nonstick.
>>
>>7298045
These were all done, starting at room temperature with a thin layer of flour (not so much that there weren't gaps), on the same burner, set at medium high, heater until either all the flour was somewhat brown, or until any of it was black.
>>
>>7296631
>aluminum core
check out this pleb. full copper with silver lining is objectively the best for heat transfer

But annon, why were the burners not centered under the pans?
>>
>>7296610
>When you rub it with a wash cloth black shit comes off it.
That "black stuff" is what your body is made out of.
>>
Cast iron skillets is awesome for searing meat and cooking pizza, but not much else. That being said it should still be a staple in your kitchen because they are cheap as shit. Cast iron dutch ovens are very good as well.
>>
>>7296610
That's just carbon/ charred food, the "seasoning" won't come off with just a washcloth, or even with soap without some scrubbing (despite the myths of how hard they are to care for).

I love my cast, third most used plan after frying pan / skillet and saucepan.
>>
>>7298079
Go for enameled, though. Then you don't have to worry at all about what you use it for.
>>
>>7298055

That doesn't make sense, silver is the better conductor. You don't want it on the outside since it's reactive, but if it's going to make an impact it should be the bulk metal.
>>
>>7298089
Silver seems overboard, especially given the price. How much better conductivity does it have than copper?

The most absurd pan I have is my All Clad Copper Core saute pan, which goes steel, aluminum, copper, aluminum, steel.
>>
>>7298095

Silver is roughly 10% more conductive than copper.

https://en.wikipedia.org/wiki/List_of_thermal_conductivities
>>
>>7298089
Yeah, but the only pure silver cookware that gets made are novelty products made by jeweler a who don't know the first thing about cookware design. Silver lined copper on the other hand is actually made, though even that is insanely expensive
