Let's face it, having a veggie option or two on the menu can be good for business. When people go out in groups they tend to look for a place that can accommodate everyone in that group. But over the last few years I've seen more and more places that aren't explicitly vegetarian, but feature mostly vegetarian dishes and just a few token meat dishes. I'm an omnivore, but I like eating vegetable based foods sometimes. Very rarely do vegetarian or vegan restaurants stay in business around here. Not because there's no market for it, but for the reason you stated, they're run by flighty, feckless hippies and do-gooders who can't hold it together. There's only two that have survived more than a year here. One, is a sort of vegetarian fast food place that serves nut burgers and falafel and veggie sandwiches, that's been around since the 1970s, and the other is a vegetarian Indian place that's been here since the 1990s.
