Crust. Pan frying/flattopping a steak will give it an amazing crust without drying the outside of the meat out. High heat to start, sear, flip, sear, heat down, flip, flip, oven till desired temp.
You get to taste the true flavor of the steak without depositing fossil fuel waste/ carcinogenic particulate onto it.

No advantages over grilling.
Cast iron works exceptionally well.
Get your pan hot as hell. Place your seasoned room temperature steak in the pan long enough to sear that one side, then, flip it over and jam it in a 400 deg oven to finish in the pan. Pull it when you hit your temp.

A good propane sear burner will give you comparable results to searing in a pan. "Crust" is a term for idiots who don't cook. Crust is nothing compared to the flavor a grill gives a steak.
