If you can't cook a welldone steak and keep it moist and tasty then YOU are a shit cook. Just because it's not ideal doesn't mean it can't be delicious.
Yeah OP I totally agree. People don't know what they're missing when they don't order their steak well. I like mine with a little ketchup on the side too.
I don't know why I get weird looks when I bring this up to other cooks. Nothing sets off the flavor of a well done steak like some ketchup.
Rare to Medium-Rare vs. Welldone
Rare to Medium-Rare is cooked at a high heat for a short amount of time to create a crust on the outside while leaving the inside pink.
Well-Done is cooked at a low heat for a long time in order to cook the steak throughout while it remains moist.

Black Dad BBQ steaks are most definitely a thing. moist, tender, and entirely well done.
Can't tell you how, it'a black people secret but we cook everything well done and it still tastes great
