What are the best cookbooks for entry-level Arabic, Italian, and Spanish cooking?

Bread Bakers Apprentice by Peter Reinhart, or Brother Junipers Bread Book by Peter Reinhart.
You could also pick up The Bread Bible by Rose Levy Beranbaum, which I've heard is a good book, but I haven't personally read it.
