so /ck/ I'm trying to improve my packed lunches for work considering my lazy ass usually sticks to sandwiches. I tried making onigiri yesterday and it was surprisingly easy so I'm gonna start using them in my lunches. So what's your go to lunch that you make? Bonus points for rice based

I'm hispanic but I'm a huge weeb, so I make hispanic flavored bento boxes. I make egg rollups with some collection of yellow and/or orange bell peppers, jalapenos, onion, tomato, and have made chile verde kinds with leftover chile verde sauce.

I've also used leftover chile verde pork/chicken inside onigiri. I never omit nori, though... I love it! I also lightly flavor the rice sometimes, like spanish rice only milder so the rice is still sticky.

I've recently been considering making small, triangular (onigiri shaped/sized) tamales to include in this box. I'm not mexican so I wrap my tamales in banana leaves.

Other things I have used in bento have included bean and queso fresco rolls with and without avocado (basically sushi only stuffed with beans and cheese lol) and I always use tons of veggies. I use a lot of yuca root, chayote, and jicama, for crunch and standard greens like broccoli.

I usually include a little dessert box with some kind of fruit with chili powder. If I'm making it for someone else, I will take the time to cut them out into cute little shapes. Spicy cucumber in lime, chile, with a little packet of salt on the side so they don't get soft. Same with Mango only I add a mix of cumin and black pepper. Ugh, godly. Watermelon is another top pick for this, and actually jicama is tasty this way also.

Check out Maki Itoh's site it's called Just Bento. Has a lot of really good recipes, including stuff that can be bulk made, frozen and thawed when needed.
