Birthday today, and on a weekend I have off no less, pretty fucking stoked. I wanna go all out on making an awesome dinner today, but for as much cooking as I've been doing lately I can't think of a single god damn thing to make that I haven't already made.

you can deep fry instead of steaming/frying and substitute diced carrots for the water chestnuts

use dumpling wrappers or w/e if you can't get the bean curd skin

Chop da onions up. Throw it in a hot pan wid some ground chicken or turkey. Cook em for 10 minutes. Throw da crush tomatoes and chick peas in wid two table spoons of dat garam masala. Cook on medium heat for 15 minutes. Add da salt and serve by its self or over rice.

I have everything except the chestnuts, soybean skin and wrappers, but I'm not feeling like asian cuisine today. I'll save that recipe though, that looks like it might be pretty tasty. Next time I'm at H-Mart I'll pick up the other ingredients and try it out.

Why does it seem like SE Asia always uses white pepper?

In most Western cuisine it's only used when you want to keep everything white, and many people think it smells like farts.

My home state is a well known producer of pepper so I always load up when I go home. Haven't tried pepper from UK stores but the selection does look bleak.

Yeah, I only buy whole peppercorns, but most of the products at Thai/Cambodian store I go to are covered in dust, despite it being a pretty busy place (it's run by Cambodians, but more of the products come from Thailand).

juicy beef wellington or learn to cook duck. both will be fun. i myself find joy in making sweets. if it were my birthday id enjoy making a beautiful, labor intensive cake or sweet. maybe a very fine looking fruit tart or 10 layer cake. or even a souffle. also happy birthday.
