>Exposure, plain and simple. Scientists tell us that aversions fade away when we eat moderate doses of the hated foods at moderate intervals, especially if the food is complex and new to us. (Don't try this with allergies, but don't cheat either: few of us have genuine food allergies.) Exposure works by overcoming our innate neophobia, the omnivore's fear of new foods that balances the biological urge to explore for them. Did you know that babies who are breast-fed will later have less trouble with novel foods than those who are given formula? The variety of flavors that make their way into breast milk from the mother's diet prepares the infant for the culinary surprises that lie ahead. Most parents give up trying novel foods on their weanlings after two or three attempts and then complain to the pediatrician; this may be the most common cause of fussy eaters and finicky adults--of omnivores manqués. Most babies will accept nearly anything after eight or ten tries.

just looked this up
>boiled cornmeal in Italian, French, and Swiss cuisine. It may be consumed hot as a porridge or allowed to cool and solidify into a loaf, which is then baked, fried, or grilled.
what kind of fuckery is this?
>>
>>7244532

Why are you even on the food and cooking board if you're just hearing about polenta (and the many similar cornmeal based dishes out there) for first time?
>>

Polenta is incredibly simple and delicious. What the fuck is your problem with it?
>>
>>7244547
When you were born, you already knew everything about food and cooking, did you? That's a freakin miracle.
>>
>>7244588

So what are you, 5 years old?
>>
>>7244547
Why else would someone who's never cooked open up a cook book for recipes and instruction? To fucking learn.
>>
>>7244607
Oh, so you're saying you didn't know everything until you were 5 years old. That's still massively impressive.

The rest of us learn different things at different points in our lives.

I pan-fry polenta in olive oil, chilies and garlic and then top it with braised pork.

1. How have you not heard of polenta before?
2. How is it fuckery?

>Not buying a small sausage-roll of Polenta
>Not slicing it into small medallions
>Not frying it in a little oil
>Not letting it get crispy on the outside while it stays creamy and delicious on the inside
>Not topping it with a little syrup when it's done

Go put peas on everything you disgusting pasty Britbong
>>
>>7244532
It's pretty decent peasant food.

I like it creamy with a red sauce on top like some kind of Italian mashed potatoes and gravy.
>>
>>7244532
Nice. You caught some fish!
Now do a switcheroo and tell them that it is new world food and not an acceptable food in their nation.

what's the matter with polenta?

>being this upset over your own stupidity
>>
>>7244564
Not op but I hate polenta just because you buy cornmeal for like a tenth of the cost and make your own easy peasy. You literally just add water and heat and then put the porridge in the fridge til it's cold
>>
>>7246659
What surprises me about this post is that it implies it's possible to purchase polenta ready-made.

You just slice it into rounds and throw it on the grill or in a pan.

There's nothing fake or overly processed about it, it's just convenient, like most things sold at TJ's.
