If you're going to use shitty bread, a wrap is a reasonable alternative. With a good bread, the bread contributes to a sandwich's flavor and texture. Some wraps offer better filling containment, and for street food that can be more important than flavor. Same way hot dogs in buns can be better than a broader sandwich at ballgames and cookouts and picnics where you may not have a table to sit down at.
