Where's the coffee thread?
I went to a coffee place with the word "roasters" in the name that just opened up and asked for a cappuchino and they mixed "concentrated coffee" syrup with hot water instead of using double espresso and then added hot steamed skim milk instead of microfoamed whole milk, and then they gave it another shot of caramel syrup for flavor without even asking me.

It wasn't very good, and I'm not going back.

High-end culinaryfags can help me with a menu? I'm having some friends coming over for a dinner and I want to amaze them. I am a great fan of French cuisine and will take the challenge on my first 5-course meal.
It must have duck a l'orange, and i would like to harmonize the other courses with it, i hope to have a consistent menu of interesting things.

Still undecided about which recipes I'm taking. Definitively Hannibal is a great inspiration for the aesthetics and a bit of what I'm going for.

That's my original outline so far:
Soup - Consommé a la Royale + white pepper flan with caviar
1st palate cleanser - some form of granite
Entrée - Quiche Lorraine
2nd palate cleanser - some form of tea
Salad - Watercress and orange zest salad with roasted potatoes and prosciutto or just a salad niçoise
3rd palate cleanser - (undecided)
Main course - Duck a L'orange
4th palate cleanser - Punch Romaine
Dessert - Pear Belle Heléne

I recently bought 14lbs of pork belly for 50 dollars. its going to last a long time as its not really the kind of 'healthy' dish id cook that often. Any suggestions for my next large cut of pork to freeze and use over time? Preferably cheap as well.

The butcher seemed pleased someone younger than 60 was there asking for something specific.

Why do they always leave this sinew on a pork/beef filet?

I'm in my late 20s and I want to get started on healthy eating. I don't even know where to start.

Long story short, I fucked around in my early to late 20s and now I'm paying for it. My liver's significantly damaged, I have a really poor diet and I know how bad I've fucked up those years of my life. I got a swift reminder from a doctor's visit.

I'm 29 and trying to fix it. I'm starting up a shopping list and going to ditch all the unhealthy shit in my house for good. Does anyone have a shopping list they use or know where to start?

how do you store, manage, etc your recipes? do you read/buy books? look online? write them down? just know them from memory?

i typically look online and follow the recipe exactly the first time I make it. if I like it and make alterations I write it down for later.

I read cookbooks, yeah. I write down recipes I find online or see on a TV show. I do save the recipes I write down but I find that I tend to remember them once I've made them a couple of times so I rarely go back to my notes. It's usually only the first or second time I make something that I refer to a recipe.

Whenever I experiment with something new I take notes regarding what I did and update those notes as I continue to improve on the dish. Once it gets where I want it I tend to follow what I described above--I have it written down but once I've done it a couple times I end up remembering the recipe.
