how can i make my breading stay on the meat?

when ever bread chicken and cook it. It always wants to come off if it is handled too much. this is not a problem I have from Zaxby's, KFC, Popeye's, etc.

i dredge in flour, then through egg&half'n'half mix, very fine breadcrumbs/herb/spices, egg against, and a final breadcrumb mix.

the breading it self likes to hold together to it self. It just doesn't want to stay on the dang chicken.

After breading refrigerate. Cooling it back off will help the breading stay on during baking or frying.

MAKE SURE YOUR MEAT IS DRY BEFORE YOU DO ANYTHING
dab it with paper towels if you need to
then flour, egg, and final batter
don't do a double dredge, that will make the batter too heavy
and most importantly, make sure your properly set for frying temp
and adjust the temp in between batches to account for temp fall off

sup /ck/ I come to you all seeking some wisdom as a fledgling trying to step up his very basic pasta game. I made some Spaghetti Aglio e Olio today, and it was pretty damn good, but I felt like it was missing some substance. I don't like the idea of adding meat to it since I think it'll feel a little heavy, but I was wondering what y'all would recommend adding. My current thought is some blanched spinach, but that seems like a lot of work.

Also, I know that it's supposed to have kind of a light garlic flavor, but I was hoping that it'd be a little more robust than what I got. I basically just let the garlic "simmer" almost in the oil for a while on a low - medium low heat. I was told that if my garlic slices brown, I fucked up. Is there any simple way to get more garlic flavor out of it? Maybe mincing instead of just slicing?

OK so Father's day is coming up, I figure I'll make my dad some scones. I've never made scones before, but the recipes online look pretty simple. My question is, what do I do to make these scones really good? Is there a scone trick? Is there a special scone recipe that you've used to great effect? Typical pitfalls that scone newbies can fall into?

My dad is from up north, he likes thick not very sweet deserts that seems like they could last you through the winter. One of his favortie foods is this polish thing that's just mashed potatoes wrapped in bread.

And I don't think I've ever seen him eat a steak or express a desire to eat a steak.

What kind of history does your cutting board have?

Mine's reversible, and I expected I would have flipped it over by now, but I love how I can see all the knife marks, the lye stains, the ink stains, etc. And the color is a great hearty yellow after being wax+oiled so many times.

I highly recommend a bench scraper as your prep station at all times. Makes cleanup extremely easy. I can just slide my board to the edge of the counter, push the trash can a little to the right, and cleanly scrape everything off the board. It's great.

The plastic rod universal knife block is also great.

First time frying these vegetables to go with chicken. The asparagus is pretty good so far but my brussel sprouts are abominable. What went wrong?

wtf did you do?

Just cut the sprouts in half length-wise and toss together with the asparagus in olive oil, lemon juice, seasoning, and salt. Put it in a baking sheet and bake at 350 on the bottom rack until the sprouts are browned and tender.

Put a pot lid over the entire pan to trap steam, this will make everything cook more evenly and quickly. Toward the end, uncover and turn the temperature up. Use clarified butter or oil instead of butter, because butter burns more quickly.
