I just made a loaf of marbled (with coffee berry flour this time) whole wheat bread for myself, because it's difficult to get good crumb with rye without adding white flour, and it has me wondering:

Do any jurisdictions have regulations about the rye content of marbled bread for sale?

Where do you live? Maybe it's mostly a Jewish-American thing and hasn't spread elsewhere? I don't remember seeing or not seeing marbled bread during my Schengen trips.

Not who you were replying to, but I've never seen a marbled bread like that in Austria either. It's usually just mixed grain.
Mohnstrudel looks like that, but that's a pastry and the black parts are ground and sweetened poppy seeds.

Culinary school or just try and work my way up from dishwasher or prep cook or something?

If culinary school, would I be better of going to a proper four year school, getting a two year degree, or getting a one year certification then working up via experience?

I've heard it's very hard work, but I wanted to know if what would be the best way to go about it without having to waste huge sums of money.

Do you work in the industry? My local community college offers three tracks: baking and pastry, a brewing and fermentation, and a standard culinary arts program. All are two years long. I don't know of any technical colleges or trade schools nearby, but I'll look into it as well.

As for the age-old question of "why doesn't my chinese food taste like the restaurant"

1) You're probably using the wrong ingredients. 99% of "chinese" recipes you see in English are dumbed down in their ingredient selection. You need strange things from the asian market to make it taste right. Douchi (fermented black beans), doubanjiang (a fermented chili paste), black vinegar, tienmenjiang ("sweet noodle sauce"--made from wheat, and used in all sorts of things, not just noodles). If you see a recipe for a chinese dish and everything in it is normal western supermarket type stuff then you can tell immediately it's a shit recipe.

2) Technique. The burner under the wok in a chinese restaurant is many many times more powerful that what you have at home. It looks and sounds like a roaring jet engine. That level of heat creates a lot of the flavors in your favorite Chinese dishes. You probably don't have that at home, and it also takes a lot of practice to learn how to use that amount of heat without burning the fuck out of your food. Get a propane "turkey fryer" you can set outside. Practice.

Are you saying that you can't deep fry at home? That's preposterous. Deep frying is easily done at home. Buy a $20 deep fryer from wal-mart, or if you want to go even cheaper then buy a $3 thermometer and use a pot of oil on the stovetop.
