biga is a kind of pre-ferment. recipe (a half batch of Ken Forkish's 80% biga white bread from Flour Water Salt Yeast):

For the biga:
>400g unbleached white bread flour
>272g water
>pinch of yeast (literally a pinch, a minuscule amount.)

Mix all these together, cover, let rest at room temp for 12-14 hours until tripled in volume.

Final dough:
>100g unbleached white bread flour
>103g water
>11g salt
>1g (1/4 tsp) yeast

Mix the final dough together, then add all of the biga. Incorporate using the pinch and fold method, cover and let rise 2.5-3 hours, folding 2-3 times during the first 1.5 hours.

Shape and let proof in a brotform (or oiled bowl), while preheating a dutch oven to 450F. Bake covered for 30 minutes, uncover and bake an additional 15-30 minutes depending on how dark you like it (I baked this one for 20 min uncovered.)

So is anyone here good at making margaritas? I think I've got a pretty good formula for the lime margarita.

I use
2 oz tequila
1.5 oz orange liquer
1 oz fresh squeezed lime juice
.5 oz organic simple syrup

Then I blend with enough ice so it's not like a slushie, but so that the ice floats on top and you can sip it with kosher salt on the rim.

However, I'm having trouble making different flavors taste as good as the ones in a restaurant. I've been trying different formulas for blue margaritas and peach margaritas and they just don't taste that great.

Also, are there any cheaper brands of tequila that make a good margarita? I've been trying it with different brands, some pretty expensive, some fairly cheap. So far it's basically been me getting what I pay for.

What are you using for tequila, and orange liquor? Use agave syrup of you need it sweeter. Add salt on the rim. Adjust the ratios to make it work. A margarita should be simple. Like a classic daiquiri.

Currently I have 1800 silver tequila in my kitchen and Gran Gala triple orange liquer. They make a great classic margarita. However, the formulas I'm finding online for peach margaritas don't taste very good. I'm not having the best luck with blue margaritas either, although that could be because I can't find a blue curacao other than cheap ones. For the peach margarita I've tried various combinations of peach nectar and pureed frozen peaches and nothing really tastes as good as the stuff I get at restaurants. I haven't tried using peach schnapps, though, would that be a good idea?

They are always either broken or out of paper or who knows what, nobody dares put their cards in one of them. I did and I spent 20 minutes trying to get help from someone because I didn't know if it charged my order but didn't give me a ticket
