Good meat filling for pelmeni is fresh ground rib meat, onion, salt, and msg. Could also throw some ground pork rib in there too.
I've experimented a lot with the dough. Last time I used a xiao long bao recipe and it worked pretty well.
freeze them and cook whenever you want some. Keep boiling for about 3-5 minutes after they start floating.

My favorite snack which I eat daily is a sandwich which I didn't invent but I'm definitely unique in the fact that I've experimented with the best ratios and stuff.

the consensus seemed to be stir fry, it's a nice compromise where you can add fresh meat and vegetables every day instead of reheating leftovers, but also where you can save some time and bulk cook rice for the fried rice. stir fry also promises variety because as a home chef you can dump practically anything in there. it's a good way to get into cooking (mostly) fresh every day

i made this 50% whole wheat loaf today -- about to serve it with a kale, lentil, heirloom tomato salad with tahini lemon vinaigrette .
I baked a rainbow trout and hasselback potatoes then served it with cabbage sautéed with apple cider vinegar and caraway seed

it's aged in temperature and moisture controlled environments when done professionally but you can do it at home as well just put a wire rack in a pan and put your steaks on the rack and shove it in the fridge, as long as it's not above forty degrees for more than a couple hours it's fine. time and temp are the main factors in whether or not shit will make you sick
