A very easy and tasty potatosalad that fits well with fish or a nice BBQ.
First start by giving the potatos a quick wash and then cover them with cool water(helps cook them evenly). Should take about 20-30mins depending on size and type. A good test is to stab them with a sharp knife and if they slide off easily they are done.
Now get everything else you need together! You can run the potatos under cold water, my mum allways said it makes them peel better.
Dice the pickles and onion (should be about 2/3 ratio)
If its for a BBQ you can cut up a sausage of some ham aswell but im not a big fan.
Now to the dressing. Start with about half a glass of pickle juice. Add 1-2 tablespoons of sugar(depending on how sour you like it) and lots of black pepper.
Then add around about 3 tablespoons of mayo and 2 of joguhrt. Stir and taste, add salt and pepper as needed(the potatos soak up alot flavour).

I put 800,000 scovile hot sauce in almost every single meal so I'm biased.

So I made a thread last week about this but I just wanted to talk about it again. I got a job working at a summer camp-like program for poor kids and part of my job is occasionally preparing meals.
Monday they're having baked chicken legs, roasted vegetables and rice.
I just wanted to see if anyone here had any critiques or advice for how I'm going to bake the chicken.
Tomorrow I'm going to leave the chicken in a brine over the weekend that will consist of water(obviously) brown sugar, garlic cloves and thyme.
Monday i will dry the chicken, apply a dry rub and oil (dry rub ingredients will be garlic powder, onion powder, smoked paprika, salt and pepper)
I will then roast the chicken at 425
Right before it's done I may brush it with some bbq sauce to give it more flavor and a nice crust.
So yeah that's it. Sorry for all the words. Would appreciate any feedback or tips if you guys have any.

Don't forget the salt. A brine must include salt.
Otherwise, it will turn out find as long as you don't overcook it. Also, don't just put the chicken into a pan. If you want nice crispy skin the chicken needs to be elevated over the drip pan so that it doesn't just sit in grease.

This is why places like In-n-Out are always busy from open to close. For an extra dollar you get a double burger fresh, with cheese, lettuce tomato, spread, fries and a drink.
If you like avocado and are pissed of about its sudden rise in price and popularity, I suggest you try making eggplant dip. Seriously it's the same, except tastier and cheaper.
When I first had guac I thought it was spoiled eggplant. When I asked what it was and were told how much it cost I got pissed, then 3 hours later when it got spoiled I was outraged.
So you want to pierce the eggplants (so they don't explode in your oven), then you bake them for 40 mins (don't get scared if they look or smell burnt), cut them open, get the insides out and let them drain, then grind them (you can do it with a fork), mix them with either olive oil or mayo and add generous amounts of finely chopped onion. Obviously season them.
You can look for the greek versions as well, but I prefer keeping it simple.

Alternately if you have a gas burner you can buy the long skinny Asian eggplants, prick them with a fork all over and just cook them on an openm flame, turning every few minutes until skin is evenly burnt all over. Let cool and peel/flake off skin. Mix the soft, smoky pulp with salt, minced garlic, lemon juice, tahini and some chopped parsley. Stuff is called mutabal, and it's fucking delicious.
