The important thing is to avoid carbohydrates. Stay in ketosis if possible. That and calorie restriction will help keep you alive a long time. Seriously, look up the recent studies on both.
Of course, life sucks without Pop-Tarts, chocolate cake, and ice cream. You'll probably kill yourself by age 30. But your arteries will be in fabulous shape.

Soak overnight, discard soaking water.
Beans go in a thick-walled pot, dutch oven, or similar. Add a smoked/cured pork product, like a ham bone, smoked hock or feet, chunk of country-style ham, etc. Use a good quality homemade stock for the liquid. Bay leaves, thyme, fresh ground pepper.
Low heat. Very gentle simmer until cooked to perfection. Taste & adjust seasoning as needed. A spash of vinegar or lemon juice is often really nice to balance out the richness.
If you're in a hurry you can use a pressure cooker; that takes about 1/3 the time compared to doing it with an open pot.
Soak 18+ hours, discard soaking water, add only some herbs (bay leaf, bunch of thyme, whatever you have) gently simmer until cooked. If you season them in the beggining, they will be hard af.

Venison and pork sausage, minced bell pepper and onion, Cajun seasoning all browned up nicely with a good fond in the pressure cooker. Add your broth or liquid, deglaze, and your good to go in the pressure cooker.

For me they need to be mashed. Mashed potatoes are easy to make and hard to fuck up. I also like to sprinkle mexican cheese and a slab of butter on top instead of gravy.

yeah the restaurant I work at serves them. it seems at most other korean-american restaurants they are served in a soupy sauce that is similar to a barbecue sauce. we saute them with lardons then coat with gochujang so they are not so soft. I like them both ways but with the soupy sauce the texture of the tteokbokki isn't as good
When I lived in korea o would eat it literally daily, that and bimbimbap. Super cheap and easy to make
