What rice goes with what foods? I got a bag of Jasmin rice and a bag of basmanti rice. I also have some just "long grain enriched" rice.

For East Asian, your retail options in the US will be primarily Koshihikari (short grain, good for Japanese, more expensive) or Calrose and derivatives (includes "New Variety" and "Nishiki", medium grain, workable for Japanese while also being workable for Chinese.)
Jasmine is good for Chinese but not good for Japanese at all, so it's probably best to compromise on Calrose until you want to specialize unless you have dreams of making sushi.

Probably the oven, on cookie sheets.
I add mine to a cold pan and allow it to cook using a medium-low heat in its own fat, and take it out when there's a little bit of color on each side. As the pan heats up, the fat renders, but it's not really messy, and gives me bacon that's cooked, but still soft, and not too crispy.
