Chewy is best

Doesn't good bacon usually have a little bit of both going on? Crispy around the edges.

There's a small window during cooking where it's got the perfect balance of crispy and chewy. The meat is still slightly chewy and the fat has rendered enough to not be so chewy, and it has a slight crisp on the outside of it all. You only have like a minute to get it this way before it gets too dry and crunchy. Would rather have dry and crunchy bacon than undercooked chewy bacon where the fat still has snap to it though.

Now is fresh wild caught sockeye salmon season in the US. Yesterday morning I bought a 30lb case flown in overnight from Sam's. Have 8 slabs of lox curing right now in the refrigerator with dill and grated lemon. Smoked enough for canning 16 pints. Grilled some in the evening for dinner and a couple leftover meals. Froze what was left in vacuum packs. Buy fresh now while you have the chance. Frozen tastes like ass.

I like tropical pepperco ghost pepper sauce. It's only 500k but tastes really good. Most 1 mil sauces are shit when it comes to flavor and are largely for bragging rights.
