I like Congee personally, it's like porridge + ramen. For me I like to add an egg to my congee and cook the egg white in with the rice. Then I take the yolk and use it as a garnish, and it tastes great with some thai soy sauce, pork, garlic, ginger, cilantro, and pepper.

It amazes me people don't seem to understand how hot a drill is, using charcoal.
I travel for my job so for the past 15 years I have become quite used to, and quite good at cooking a smokey joe, or a jumbo joe. Was grilling up some buffalo chicken tenders when a co-worker/neighbor at my motel asks, "why do you scoot all the charcoal to one side?", to which I told him that it allows for indirect heat.
So many times I watch people get a blazing fucking hot grill charcoals all spread around the bottom, the the griller is amazed their food burned so fast.

Every time I try and make it a whole slew of things go wrong. The coating always cooks off, it always comes out either undone or burnt. I'm godawful at making it.
Any advice to turn me around?

this is what burgers actually do
made a traditional polish dinner for my family tonight. i made
1. pierogies. these are polish dumplings filled with either potatoes, meat, sauerkraut, or something savory. i had recently gone to cleveland and purchased 24 pierogies from one of the best matkas in the US and brought them home. i sautéed them in butter until golden brown on both sides, and added a little paprika and green onions.
2. kielbasa. i picked up 4 kielbasa from a local meatshop earlier today. i sliced them down the middle and sautéed them in butter and lemon, adding some pepper and paprika. a little char on both sides told me they were finished.
3. beet/carrot salad. i sautéed some beets and carrots in olive oil with pepper. i then cut up some lettuce, drizzled a little balsamic, added the aforementioned carrots and beets and tossed the salad.
i also had various meal accoutrements, such as sauerkraut and sour cream. my papa was out fishing today and ate on the way home, so he didnt eat (which made me kind of sad) but my grandma did and told me she liked it. i saved some for my mother when she gets home from her meeting.
it was a good day.
also, do you guys have any recommendations next time? ive been learning to cook polish food from my family for many years, and since i will soon marry, they are making me go through these traditionalist cooking trials. i just want to make them proud.
