First off, I wouldn't worry so much about "adding" things. The best thing you can do for mac and cheese is to make it with quality ingredients, so that's the first place I'd look to upping your game. Simply choosing a good cheese that melts well will make a massive difference. Gouda and Gryuere are both great choices.

Very lazily. Brown ground beef in a pan. Sautee onions & bell pepper, then garlic. Add seasonings (salt, black pepper, chili powder, cayenne, cumin). Add equal amounts diced tomatoes and beans (preferably kidney or pinto). Simmer for a few hours. Top with sour cream and shredded cheese. Cornbread makes a nice addition.

Just finished my bottle of Dave's Gourmet scorpion sauce
Currently eating 2 pepper palace sauces, voodoo reaper and scorpion stinger.

They're nice but would like if they were hotter. I thought they'd be hotter since they are reaper and scorpion based but vinegar is the first ingredient on both. Not bad but really need to eat a lot to get the heat

Ground meat has a MUCH higher risk of having some nasty bacteria in it, because it's the meat of many different animals all mixed together, and naturally when you cut something, you increase it's total surface area.

People make jokes about irradiated ground beef, but it's probably a lot safer to eat.

making a dip with raw garlic (like hummus or salsa) is rough on your stomach, so add some raw ginger to it, calms stomach down. hooray garlic.

Buy 500g/1lb jar of peeled, untreated garlic cloves.
Drizzle with oil and slow roast in the oven.
Blitz with 500ml/1pint of milk.
Bring to the simmer and add veg stock cube.
