Raw blood is among the most risky foods you could possibly consume. Cooked? No problem.
I know of many dishes that use pig's blood, but I haven't heard of many others. In fact, I can only think of one: pressed duck. A duck is roasted "rare", then the carcass is squashed in a special press. The resulting fluid (mostly blood, but also fat and other juices) is cooked to make a sauce. I think that some of the cattle-herding tribes in Africa make use of cow's blood but I'm not sure if there are any specific "dishes" that are well known or not.

Get a duck.
Before you slice it's neck, pull the feathers off. Wash it. Let it drink a can of beer.
Slice. Add fish sauce. Add boiled sliced duck liver or other good duck meats. Garnish with spring onions, sesame seeds.
Bam, blood jello. Really good with wheat crackers.

When "pressed duck" is made, the duck does not have the blood drained out. The head/neck is not cut; instead the duck killed by having its neck broken, that leaves the blood inside.
