Is there a good way of browning braised meat after the braise without drying it out? Would throwing it in a scorching hot cast iron work? I forgot to brown it before and would like to give it some crispy texture if possible.

I know it can be done via deep-frying, as I often do that with a couple Asian dishes: Master stock chicken, and braised pork belly.

In both of those cases I braise the meat first. Then I take it out of the liquid and let it dry off (putting wet food in the deep fryer is a great way to burn the fuck out of yourself). Once the food has sat on a rack for about 10-15 min to dry off I deep fry it.

Sirloin tip steak is $4/lb right now so I'm going to buy a lot and freeze what I won't use over the next few days. Are there best practices for freezing steaks that I should be using? They probably won't stay in the freezer for more a month anyhow.

Nothing beyond the usual. Make sure they're wrapped up tightly to prevent freezer burn. Ideally vacuum-pack them. If you don't have a vac sealer then wrap them tightly with cling film, or put 'em in freezer bags and use water to press out the extra air.

I feel there is a scandal waiting to happen

A friend of mine and I were just discussing pic related. He contends that this is some insurmountable task and that the 5 a Day goal is unrealistic for westerners to achieve. I disagree. Also, he's about 50kg/110lbs overweight.

Do you find it difficult to eat 5+ servings of fruits/veg daily? If not, what's a typical day's worth of meals for you like. If so, why do you think you find it difficult to eat fruits and veg?

Howdy /ck/, does anybody have any tea recipes they would like to share? I usually add lemon, honey, and cinammon for their health benefits. I want to try out different mixtures other than the normal like the one I already do. What do y'all mix in your tea?

I got an old ass bread machine from my parents that they scooped up for $2 at a good will. Took me a while to figure out what model it was, what size it was, etc, only to find out it had no normal size.

I made box of pre-mixed material for Italian bread and it was good, but it was super fucking dense, and only used about half the machine's cooking area so it came out as a dense ass cube of bread.

Figured it was time to experiment and tried different flour types, ingredients, ingredient order of addition, etc.

Finally made a loaf of bread that filled up the machine, didn't overflow it, came out dense AND soft, and has more protein for a more filling bread.

Figured I would share here. This is a for a 1.5 lb bread machine. Add off this to the machine in THIS EXACT ORDER.

2 tsp of active dry yeast
3 Tbs of sugar
1 tsp of salt
1 cup of PB fit (peanut butter powder)
3 cups of BREAD flour
1/4 cup of vegetable oil
2 cups of warm water

Turn the machine on white bread function and let it run.

The PB powder was just added with me tossing in random shit to see what stuck. The extra sugar let the yeast work a little more and made the bread a little more dense but still soft. It also added quite a bit of protein to the bread and made it more filling to consume while not drastically changing the flavor. It is a slight change of flavor, but not much and the change is a slight after taste of peanut butter which isn't a bad thing at all for the most part.

Just throwing it out there. Use it, don't use it, the choice is yours.

What kind of experiments have you done with cooking that produced results you enjoyed.

(As an aside, that bread is fucking amazing for French Toast)

I'm not familiar with peanut butter powder, but I'd guess it involves removing the oil. So you might be able to replace the powder and oil with regular peanut butter. If you wanted to.

Morning /o/

I'm thinking of getting a stainless skillet to replace my now worn non-stick pan, just a few questions;

Does food stick badly to them? i'll be using it often to cook eggs and don't want them to weld to the pan, or have to use a ton of oil.

Are they easily to clean?

Can you season them like cast iron?

Yes it does stick badly if you don't know how to use proper temperature on your stainless pan.

Don't burn your fat, just wait for the right moment, throw in your food, let it sit a bit (not too quickly, that's when it sticks the most, it's especially true for meat), and it will un-stick a bit.

You will have to scrape a bit more than usual, usually for the tiny bits.

And be less lazy, clean well your cooking ware once it's done.

As for sticking just add fat. PAM is one of my most frequently bought items and I have never had a problem with sticking.
