Yesterday I had the worst uni (sea urchin) nigiri I've ever had. It was so bad that I almost spit it out/threw up, and if I weren't at an important dinner, I would have. I'm amazed it didn't make me sick all night. It was so bad that I'm turned off of the flavor, at least for a while.

What're the best widely available nigiri or sashimi options that /ck/ likes? I love roe and other fishy tasting stuff normally.

First time I had uni I though it was awful because it was less than fresh, and less than fresh uni is fucking disgusting. Took me years to try it again and realize it's delicious.

I have some 7 gallons of blueberry wine fermenting. I'm about a month into it so the bubbling in the airlock has slowed down considerably. (15lbs of handpicked wild blueberries, took a few weeks to collect)

Maybe I'll get a grape wine kit afterwards so that I have some more alcohol to pull me through the winter.

A neighbour farmer grows hops too and they're ripe right now. He doesn't use them so I've been considering picking some, but I'm undecided.

Why does /ck/ hate this guy? I was along with the hate train until I watched a few videos and realized "Oh, this is just an average cooking channel with some nice presentation".
I thought it had something to do with the clickbait pop culture recipes he does, but even then he'll usually make what his video is referencing and then go back and make a better original recipe.
Really the only thing left to hate about is his patreon e-begging.

How come my dough is never stretchy? I seen video of chinese stretching dough out into noodles or people making silky smooth pizza dough. my shit breaks in half so easily. I'm using 2:1 flour to water ratio. Thanks

Find a higher gluten flour if you need to and make sure you continue to kneed the dough after it's mixed for at least 10 minutee

That stretchiness comes from developing the gluten in the dough. Knead longer. Depending on what you're trying to make some doughs need to rest before working them.
