Anyone have tips towards cooking pizza with the broiler? I imagine you can get higher than 500f if you get right up close to it. Pizza always seems better if cooked at higher temp so this interested me as a potential method

I have a gas oven with a single element at the top... i find that broiling for me is really uneven. the electrics, while maybe not as hot, seem more even.
Just an observation.
Most baking books tell you to set up your baking stone at the bottom of the oven for "hearth style baking."
I've always used that technique and then popped it up to the broiler to finish.

My broiler only heats the top element, not the bottom, and I think pizzas need more bottom heat than top otherwise they'll burn.

Because some microwaves are dumb and make it too much work to set a specific time rather than just pushing a single button for preset time. I always clear leftover time though because I use the clock on the microwave.

I never put sauce or mozzarella on my eggplant parmesian because it just makes it soggy and defeats the purpose of frying it. The toppings also make the breading on top come off easily.
Also, don't forget to salt the eggplant before hand to remove some water on the surface so the breading sticks to it and doesn't fall off in the fryer. Rinse off the salt and pat dry before breading and frying.
And of course I use a homemade sauce, it's incredibly easy and tastes way better.

Salt it to draw out all the bitterness and moisture half an hour before cooking.
Then give it a light grilling, layer in a baking dish, periodically adding a dusting of breadcrumbs and cheese and your own tomato sauce. Top with cheese, ensuring there is liberal sprinkling of parmesan and breadcrumbs for a lovely crust.
Bake for about half an hour.

Basil, cumin, black pepper, white pepper, salt, cayenne pepper, onion powder, fennel, caraway, coriander, thyme, sage, oregano, tarragon, ginger powder, garlic powder, mint, cardamom, paprika, sesame, piment, juniper berries, mustard seeds, laurel, lemongrass, rosemary, anise, nutmeg and cinnamon. I might very forgotten some, but you can make basically anything with this.
