criminal records check. actually phone their references. No reference = fired. Also a face to face interview to make sure to can handle customers

Frankly, the latest technique is the series interview, where you go to 5 or so interviews with most of the people they'll be working with.
Others have found that asking to submit sample work is better.

Most larger firms hire PI's to verify who you are and dox you.
