It's likely not an actual Cross Guard. The Movie is called "The Force Awakens", suggesting something ancient 'Awakens'. Therefore the guy in the clip could either be ancient, or maybe raided some tomb or something, and retrieved this blade, which was most likely made by someone who didn't really know what they were doing when it comes to making a Saber. The "cross Guard" is more likely execs plasma, and is most likely emitted from the middle of the steel part, and the steel bits are just covering some of it, therefore, if another blade were to slide down the side, it would cut through the steel bit and reach the excess plasma and be stopped by that. The blade and/or the guy holding the blade could also explain the way the blade looks and sounds, being unstable, which is why it looks more 'fiery' and makes a more screechy noise.

the thrawn trilogy is great, a must read, plus it introduces probably the best EU character in the whole series (mara jade).

i also really liked the new jedi order series, but its a lot of books and some of the plot is hard to keep up with. if you plan to read it i'd also read the jedi academy series, its essentially an introduction to the new generation (solo kids plus friends plus newer jedi).

the x-wing series is good, like 7 books in that one and it expands on somewhat lesser known characters.

black fleet and hand of thrawn series aren't to bad. dark nest trilogy is ok. legacy of the force was a knife to the gut with the way it went, and fate of the jedi didn't really fix it.

they actually did use a new line of clones for a while, non jango clones that is. they were rapidly grown and didn't get the extensive training that the jango clones did though. apparently there were still some in circulation during ep4-6 but lots of those guys were human recruits like you said.
