Short answer: because casting
Long answer: the show already has way too many POVs and some of them progress too slowly as it is compared to others. The plan is to have their pace meet so everything makes sense chronologically. More characters = higher budget and very fucked up pacing between POVs. GRRM has a lot of characters that just served as plot devices (albeit he made them interesting) with no major consequences if they didnt exist.

The filler in this season is mainly because coldhands was kind of a deux ex machina for the mutineers.

That Young Griff part was pretty clear imo. I think Varys found a young boy from Valyria, with white hair and purple eyes and raised him to make him and Connington think he was Aegon himself. Vyseris was the right heir to the throne but Varys somehow thought that he was going to fuck everything up one way or the other. And when he did and died in Vaes Dothrak, Varys used the fake Aegon as a plan B and a way to help the Targaryen rule the seven kingdoms, and more importantly, to finally kill all the Lanisters, as it's pretty clear he hates them.
But I don't know who the real Aegon is though. Is he in the books disguised as another character or is he yet to appear?

The Daenerys fight has already been largely solved in a preview chapter. Selmy leads out an army on her behalf and catches the slavers unaware and have little time to prepare. Just as they do this, the Greyjoys attack the slavers from the rear, catching them in a pincer attack.

From there, you can assume its a slaughter of the slavers, sellswords jump to Dany (Tyrion probably convinces Ben Brown), etc.

Given how little time there is left, Dany probably leaves for Westeros as soon as she gets back to Meereen
